Vinnies Lectin Free Pancakes
It has too many ingredients, but worth it!
Ingredients:
1/4 cup sorghum flour
1/4 cup millet flour
1/4 cup teff flour
1 teaspoon baking powder
1/2 teaspoon salt
2 tablespoons hemp flour
2 tablespoons tapioca flour
1 teaspoon monkfruit powder (and/or Stevia)
2 eggs
2 tablespoons olive oil
1/2 cup milk of your choice
Directions:
Mix wet and dry ingredients separately, then mix together. Let rest a few minutes and fry em up. Batter is slightly thin, add some extra liquid if it's thicc.
